ISTANBUL THE SWEETNESS. This is our signature Masala chai blend. We start with the base notes: premium organic Assam black tea, sourced from the best plantations in India. We mix the leaves with spices like cinnamon, cardamom, cloves and star anise, then infuse with toffee-ish caramel. The end result? A spicy, creamy chai with just the right amount of sweetness. In fact you shouldn’t need to add additional honey: the natural caramel gives a sugary zing, and you can really taste the malty mid-tones. To serve, just pour over 250ml of hot milk (full cream tastes great, but you could use soy or almond) and steep for two minutes. Pure bliss.

SRI LANKA THE SPICINESS. A good Masala Chai should stick to a few simple rules. You want to use green cardamom pods, not black. The ginger should be fresh and hot. Don’t add more than one or two cloves (for obvious, very pungent reasons). And of course, use the highest grade black tea you can find. Our signature Masala Chai is hand-blended from 100% organic black tea, cinnamon, cardamom, cloves, ginger, star anise and black peppercorns. It’s a silky brew: aromatic and mysterious, full of malty bass notes, sweet honey, citrus and spice. It’s so fresh, you don’t even need milk: just infuse 2 tablespoons in hot water for three minutes.

TAJ MAHAL THE VIBRANCE. Spiced chai and turmeric root are a dynamite combination. You get all the fragrance of cloves, cardamom and star anise, plus a double dose of immune-boosting curcumin, topped with notes of orange and peppery ginger. We really like this blend: the sweet chai smooths out the bitter heat of the turmeric, and the colour is basically sunshine in a bowl. Curcumin also takes chai’s health benefits to the next level. It can help reduce inflammation, increase the body’s anti-oxidant levels, improve brain function and slow your risk of heart disease. Pro serving tip: for a little oomph, garnish with a pinch of cayenne pepper.
